Hi,

is it possible to create two zpool's (each with a different size of hard drive, i.e. a zpool with 1TB drives and a zpool with 2TB drives) and then combine those two zpool's to a single volume (maybe use as JBOD?).
With this I would like to use all my different types of hdd's without losing any redundancy.

no

but you may create a pool with vdevs builts from different size disks ( it might not be a good idea however).

I'm with peterh. It's not recommended to have unbalanced vdevs. I don't even know if the GUI allows you to or not.

You could simply have 2 seperate zpools.

There's no way to remove a vdev from a pool, right? Similarly, if a vdev loses too many drives, the data on healthy vdevs in the same pool would also end up useless, right?
