Apps: no host path at all

Hi everyone!

So I built myself a Truenas with Bluefin (as this was the current version to download) and ripped all my HDDs out of the old QNAP. So far I've put all my data on with the help of some borrowed HDDs.
Now I try since days to get some apps running with added host paths - but in no app any path shows up, no matter what I try.

Here we go with some details:
CPU: Intel(R) Core(TM) i5-2450P CPU @ 3.20GHz
RAM: 32GB nonECC (all the CPU/Board can handle)
TrueNAS Version: TrueNAS-SCALE-22.12.0
BootPool: 128GB SSD, mirrored
SystemPool: 256GB SSD, mirrored
DataPool 01: 4 * Seagate X20 18TB, RAIDZ1, 512GB SSD LogVDEV, 61% full
DataPool 02: 4 * WD Red 4TB, RAIDZ1, 50% full
All shares with SMB due to mixed environment (Windows, Apple, Android, iPad)

Mainboard, CPU and RAM are pending for upgrade to ECC - budget issue.

What I did and tried:
- Deactivate the Host Path Verification, since I need some folders in SMB as well - no success
- Made an extra dataset without SMB shares - no success
- Set owner to group and user apps with full control - no success
- tried to run the apps with root - obviously this can't work
- added another user to the apps group and tried - no success
- added the app user to the administrators group - no success
- I don't remember what else I tried in the last weeks - all without success
- everything accompanied by many reboots, app reinstalls etc.

The apps deploy and run fine - just the added paths don't who up anywhere...

The main apps I tried are ResilioSync, FileBrowser, Paperless-NG plus several others.

In the logs I am not able to find too much. The most suspicious is this in the application events:
0/1 nodes are available: 1 pod has unbound immediate PersistentVolumeClaims. preemption: 0/1 nodes are available: 1 Preemption is not helpful for scheduling.

My suspicion is that I am doing something wrong in general - but I cannot find out what it could be.
Currently I am close to rip the boot drives out, install Angelfish and hope that I can import my pools (currently I have no duplicate of my data; this is in the works). A downgrade from Bluefin seems not possible by what I found.

If anyone has an idea? Oh: Linux is not my field - noob friendly instructions are very welcomed

Thanks a lot for reading and for any idea that could help!

I have filebrowser working. I also have 4 other containers running from TC, but none you mentioned
I would dump out the config and ask you to check against that - but there is unfortunately no way of doing this. However from memory the only changes were made in the Storage & Persistance section:
  1. App Config is set to a PVC - as I don't care what's in this
  2. App Data Storage - set to (in my case) /mnt/BigPool/SMB. I also set RO as I don't want to change stuff using filebrowser. I did not set automatic permissions as I didn't want TC overwriting everything that was working. My permisions are in general very permissive - so this hasn't caused any issues
  3. App Database Storage - set to PVC
Question - if you install scrutiny and only edit the name and the schedule leaving everything else at default. Does the container start and do something?
