2 HDD Raid Recommendation

In another thread today I finalized and ordered my first NAS box. In reading many posts here with the RAID topic, people are running quite a few drives. I will be starting with only 2x 3TB WD Reds. I'll be running a SuperMicro X9SCM board and using the onboard controller for the drives.

There seems to be quite a few comments that FreeNAS has a pretty good RAID-type(?) ability built in. I've yet to use any NAS OS, so what do you recommend my setup look like?

Wish list/Criteria:
  • 3TB is plenty for me at the moment.
  • I would like to be safe in the event of a disk failure
  • I would like to be able to add an additional disk, 2 if necessary, in the future if storage expansion is needed.
  • Basically, I just want my data to be safe (of course).
Sorry if I'm not asking or framing the question properly.

Be warned you can't add disks to a vdev after its been created. Read the presentation in my SIG if you are confused.
