Planning First Build - CPU for VM workload?

Hi everyone. I am planning to build a TrueNAS Scale system to be a home file server, and also plan to have (up to) two VMs on it, Windows 11 and Linux (not sure the flavor yet) From what I can see from the documentation, Scale is the preferred version for this workload.

What I am stuck on is, what should I be looking for in terms of CPU, given this workload? I know I am looking for ECC, but haven't been able to find a current listing of processor specs and ECC support. Any advice? Or even an up to date reference document that would have that information?
