Will slow down the performance of the snapshot?

I hv 5TB data on my freeNas storage and more than 50 user connect to freeNas to read/write file.

May I know will slow down the performance of the snapshot taking?
And if I recovery the data. I need to restore all data on the dataset?

The number of users won't slow down the snapshot. It will happen very quickly.
You can either rollback to a previous snapshot, or you can clone it and copy what you need.
