Various size disks RaidZ2

I have 6 disks, 4x3TB and 2x2TB. I'm ok with waiting the capacity and having 6x2TB RAIDZ2 and then upgrading the 2TB disks at a later point. I've noticed from the GUI this cannot be done but I thought ZFS had the capability. This was one of the strong points in being able to grow the size of the data pools in that if you have a 3TB drive go bad you can simply swap in a 4TB and eventually if you want to replace them all you suddenly have new capacity.

Can this be done?

Yes, you can create a vdev with mismatched drive sizes; I'm running one right now. In recent versions, you can configure it from the GUI, but you need to use manual mode to do it. And yes, as @INCSlayer says, the pool will automatically expand as appropriate.
