TrueNAS Scale - Small NAS for PLEX at home

Hi, im thinking of using a small dell optiplex 7050 for a plex server, it comes with a 250GB NVME and one 3.5" HDD... (I have three spare/old 2.5" 2TB hdd)
This is my first install/hardware project .. so after reading around here i have some ideas and would love the feedback.

1. Partition the NVMW. Install TrueNas Scale in boot. put VM for plex / home assistant on the second part.
2. Install the three 2.5" HDD and use them in a RAID 5 configuration.

My question, is is it a good idea to run the VM in the M.2 NVME ? I read this could fail because of read/write too much, and they are not good for that.
Should i instead run the VMs on the RAID DRIVES / POOL ?

Sorry about my english & butchering NAS / TRUENAS SCALE Terms...

Another question i have the 2.5" drivers laying around, so im going to install using this to get the hang of things. I guess is easy to migrate info / rebuild to bigger drives down the road ?

or better only for booting, and later add a second nvme as a boot mirror and run the VMs on the disk pool ? :P
