watched a bunch of vids and searched but most info is not for latest version

this seems to be something I do not understand yet as the problem is the same for any media server I try. Plex is the most familiar to me so that is what I am going with to start.
I installed from the app section the latest stable plex
I have to pools setup one is a single larger drive
/mnt/music/samba music/MP3 (ACL)
the mp3 folder has my library of songs already copied to it.
So there is no jails section in the menu ( i am thinking that is for an earlier version or for core)
when you install the app it opens a menu on the right side of the screen to set everything up.
This is where I need a tutorial. How specifically do you set the Host and mount points and is there something I have not done under storage and shares that makes things show up.
Then what to set up once you open plex.
I have /mnt/music/samba music/MP3 as host and mount but after scanning, there are still no songs in plex
