I'm having a bit of trouble interpreting my security output and there are couple of things specifically that I was worried about. How do I know what exactly is a problem? Do you always get security output, or only when there is a problem?

Specifically I was worried about the following messages:

When did you receive this email???

See your logs for actual time stamps for the output.
Security emails should be sent with every reboot, but I've never bothered to keep track
regarding reliablity of these reports and if they get sent every time?
Your "errors" can be ignored. The first you listed has to do with watchdog
and the second is just a NIC driver hiccup.
Google these things for more info ;)

Oh good that makes sense I did reboot . I was wondering why I was getting these emails.
