I have a old server that was being thrown out it is a proliant ml150 G6 with a zeon e5520 I know this is very old server Hardware and I know freenas doesn't require anything particularly power hungry. Am I able to use this Hardware?

It is not ideal, but it would work. You should be able to upgrade the CPU in that system if you find you need more compute cycles.
Something like this for example:

The important thing is that you must not use a hardware RAID controller.

I'm pretty sure the guide you're responding to answers this question--a LSI SAS HBA.

Just curious Why would you choose this CPU over some of the ones with higher frequency but lower amount of cores?

What's the minimum number of cores you all would recommend?
it depends on your use case. how many users? which services do you want to run? are you planning on making use of plugins and/or vm's?
