Proper Mount-points With Syncthing (NAS > Client)?

I am having trouble determining the proper way to setup mount points with Syncthing.
It seems like the most common way, is to create a new dataset for Syncthing data, then connect the device and mount the directory to there and have it sync the data to that new dataset folder. This makes sense.

However, that is not what I want to do. I am trying to do the reverse. I want a dataset, or some specific folders from the dataset, to be synced to my local machine.
So that's where the mount points are getting confusing to me. Because I don't want a duplicate folder on the NAS with all the data. I just want to send only to my local machine, as automated backup solution basically.

He suggests creating a new user for Syncthing. Is this still required?

And is it possible to restrict Syncthing's plugin to LAN? I notice it installs Nginx, which I don't need. I only connect over VPN to LAN to access the server. It's not exposed publicly. The less the better.
