Pi-Hole Docker --> own ServerIP??

Is there a way to assign the Pi-Hole-Docker its own IP address?

There is an argument "ServerIP". If I set an IP there, Pi-Hole can still only be reached via the actual server IP.

you dont have do configure a dedicated ip for pihole. by default it listens to 0.0.0.0 which is basically every interface.
If you set your truenas box's ip as dns server in your router it will start blocking queries
