I would start with the FreeNAS User Guide (PDF Warning) linked from the FreeNAS Wiki.

If you're new to the concept of NAS in general I would build some VMs, load them with non-critical data, experiment and break things, and then build a test bare-metal machine. Repeat with non-critical data, break things, fix them.
