When I made my extents I specified a size and now that I have been using it a while I think I made it too big, Is it possible to shrink the size of an extent without loss of data? Or is it better to destroy it and recreate it?

Thanks

Depends on 2 things:
1) Does FreeNAS support shrinking extents? I don't know haven't tried it myself yet.
2) Your OS that accessed the extent, on Windows 7 for example you can shrink a volume, first defrag the drive with something else than the built in defrager which will allow you to optimize for free space, this should put all the data at the start of the extent, once that is done shrink the volume using Windows 7 and after that shrink the extent, just make sure you don't make it smaller than the drive size required by Windows.
