Budget Video editing

So I have a spare i5-6400 and a ThinkServer TS140 laying around and was thinking of using it for a budget build NAS for two video editors. The video files have a bit rate 100mbs. They also have 16tb of files and use Dropbox as a backup. On the editors PCs they both have Thunderbolt 3 as well. I was wondering which route from the options above would be a good chose to start with and what things you would recommend to swap out or add and how may drive in what raid and cache SSD size. Any links for me to read up on as well is much appreciated too.

So I went with the Thinkserver and got an intel sas card with an SFP+ card. I installed 24 GB of ram and 4 SSD as cache and 8 purple WD HDD; these were free and available. With 5 GB files, I got a read-write 908.7/843.8MB/s.
