Backup to zpool on external USB disk

Hello!
I am trying to create a backup of my current 4 disk (2x2mirror) onto a single external USB hard drive.

I thought I could use rsync, but I think I have to point to another server, not a drive, right?
So I am trying to do a replicate task, I made the external drive a single disk zpool and tried to do a replicate task to copy the pools I care for to the disk, however it keeps missing things, despite selecting the recursive option.

Basically here is what I would like to do, I would like to know the best way to achieve it:
Backup to an external disk, attached to the server via USB
Be able to unmount this disk and store it in my fire resistant safe, do NOT want to leave attached to server
Would be nice if I could scrub the pool, so would like to keep it in ZFS not just format NTFS and copy files over to it
Would be nice if I can utilize snapshots/rsync so that only changes are moved when I do a (lets say monthly) backup refresh
