I'm using Windows 10 on my main PC.

What's an easy and reliable way to copy the USB stick that I'm using on the FreeNAS, onto a file that preserves all the partitions and foreign file systems etc.? I must also be prepared with the converse, a way to burn that image onto a possibly different USB stick with slightly different capacity.

I want to do this as a back up. Previously I had a problem with the USB image went bad somehow and I started with a fresh install to some adventure. And, it's good to have that before doing a planned upgrade.

I think what you want is to backup the freenas config file. Then you simply reinstall freenas onto whatever usb drive and upload the saved config file. Done.

System>General>Save Config
