I assume I should still proceed with updating the NVM to match the driver, right?
Yes, update driver first and then flash the newest NVM image. For your ESXi host make sure you do the same...it should use the latest i40en driver.

NVM done on the FreeNAS box. Everything looks good.

With regards to ESXi, I'm a bit confused. On the VMware HCL entry for the X710-DA4 (listed as X710-4), they show i40en version 1.4.3 matched up with NVM 6.01. Is that really the right driver version?

Yes. It's the native driver and that is the correct version.
