The CPU should be just about ok for 1 1080p transcode. If you are not transcoding, it might be able to run a couple of streams.
I’ve just realised that FreeNAS needs 8gb ram and my server only has 4gb. I’ll grab some more. Any recommendations?
Any ECC RAM should be fine. While you are at it, I would advise maxing it out to 16GB, by getting 2x8GB sticks. Sell the 4GB stick on ebay or keep it for another server if you have one.

Ok, I should only be running one stream at at time just now so hopefully it should be ok for now, I can always change it for a more powerful one at a later date if need be.

Can anyone advise where I can get ECC ram from, most places I have looked seem to sell non-ECC?

Most decent computer vendors should sell it. I've gotten ECC from Amazon before. Your best bet might be crucial.com; they'll guarantee compatibility with your system, and I believe they ship worldwide.

Ditto @danb35 's Crucial suggestion. I've been buying memory from them for many years.
