Help pick a CPU for a home NAS running file and backup services, possibly Jellyfin

Hi. I'm looking to build a home NAS for the following requirements and I want very good speeds:
  • 4x 10TB
  • I don't want to be limited buy the CPU, only HDD/raid speeds
  • Low power consumption
  • Diverse file serving needs: afp, ftp, iSCSI, NFS, rsync, SSH, SMB, WebDAV etc
  • Backup services for Mac, Linux and Windows
  • Capable of running TrueNAS virtualized, inside Proxmox
  • Capable of running Jellyfin (no transcoding, direct play only, max 2 clients)
  • I have a seperate Proxmox machine running containers/vms that will connect to the NAS
Is a C3558 good enough for the task or would a C3758 give me better performance? Maybe, alternatively a i3-6300?
