I created a storage pool and it appears when I did this I encrypted it as well. When I set the encryption up it appears that I didn't note where I saved the key file and now I need to rebuild this pool but am unable to unlock it.
Is there another way that I can unlock the pool so that I can set it up again, the data within this pool isn't important as it is only camera footage.
I hope this is the correct area, so feel free to move if it isn't.

Have you ever exported this pool? If so, then the keyfile is removed from the boot-pool.

This means you will need the keyfile, which you've exported. If you cannot find it, then the data cannot be accessed.

If you really don't care about the existing data, you can simply destroy the pool and use the disks to create vdev(s) to build a new ZFS pool.

I don't believe I did unless this is also done when downloading the configuration via System Settings, General.

Yeah, I'm more than happy to do that, nothing critical on the pool, where would I be able to delete the pool as when I try from Storage it want's to be unlocked.

You need to export the pool itself, which will prompt you with an option to destroy it.
