@fta, very good point, thanks. In my Linux RAID days I often did a three-way-mirror on the boot partition, and used a RAID5 on the big data partition.
After this discussion, I'll be comfortable going with a two drive mirror. It'll be my best compromise in terms of reliability vs power consumption/noise. I currently have a tower case with four drive bays, I should see to get me an ITX case with hot pluggable ones for added convenience.
