Switching from USB flash boot to SSD... will this work

Am I correct in saying...

Backup config.
Power off.
Remove USB drives.
Install 2 x SSD drives.
Fresh Truenas install to SSD's.
Restore config.

If I am wrong, I appreciate any pointers before I lose all my data.

Should work.
You could all connect SATA drives and then mirror existing USB drives across the SATA drives.
Code:
System -> Boot -> Boot Pool Status -> existing device -> attach

I will soon be moving my Truenas server into a bigger case.

Some drives connected to onboard SATA controller, some into seperate SATA controllers.

Do I need to ensure drives are connected to the same controller after moving into the new case or does it not matter? Especially if installing new Truenas?

If ZFS can see the drives it can figure out the pools.
You just need to sort out the BIOS to it boots the right disks.
