Stuck on mountroot at boot

Hello, I was having issues with a pkg not being up to date and mistakenly did "pkg update && pkg upgrade" on the entire OS rather than inside the jail with the issue. After the update completed, I rebooted my otherwise working server and am now hung at boot. I was running TrueNAS-12.0-RELEASE (f862218137) before I did the pkg update. I get splashed with a big wall of text and it is stuck at mountroot.
Somewhere in that wall of text, I noticed this error:
"Trying to mount root from zfs:boot-pool/ROOT/12.0-U8.1 []...
Mounting from zfs:boot-pool/ROOT/12.0-U8.1 failed with error 2: unknown file system."
My TrueNAS installation is on a USB drive which seems to have successfully loaded as "da0"
I am unbelievably stumped and have no clue where to proceed here, any help would be greatly appreciated.


Specs:
CPU: Intel i5-4570 @ 3.20 GHz
Memory: 8 GB (2 x 4 GB) Micron DDR3 1600 (MT8JTF51264AZ-1G6E1)
Storage: 3 x 3 TB HGST (HUS724030ALA640 MF80AA70) HDD's in (I believe) RAID-Z1
Boot USB: SanDisk Cruzer Fit 16 GB
