I'm trying to add two nvme drives for my ZIL/SLOG, but it seems to want to mirror them. Is there a way to stripe them instead?

This is expected and desired. Depending on your pool, you may not even gain any performance considering your already using NVMe. Please provide details about your system and pool so that we have have a meaningful conversation on the subject.

Barring any conversation, ZFS will not strip SLOG devices. Mirroring is done to support fault tolerance. If one drive fails, the ZIL (on the SLOG) is still intact and performance does not suffer.
