Zfs pool questions

I have a dell r720. It's running proxmox with truenas core virtualized and the hba passed through in IT mode. The vm with truenas is given 196gbs of ram and 24cpu cores. In my pool I have one 10 1.2tb 10k sas drives in a zfsv3 vdev. I just added 6 more drives also 1.2tb 10k sas drives. I've done some research and would like to move my first vdev to be just 8 drives and take those two and move to the 6 new ones to create two vdevs with 8 drives each. How do I go about this? Do I just offline one drive at a time and build up the new vdev? Or what should I do I know I could lose a drive or two and the first vdev will be okay but what's the best method.

Your pool topology isn't clear. Could you provide the output of zpool status? Typically, VDEVs can't be shrunk or expanded after creation.

From what I'm reading, I see reference to at least one RAIDZ3 VDEV in the pool, meaning VDEV removal is off the table, so the only way to change the pool layout is backup, destroy pool, recreate pool with desired layout, restore.
