Plugins and file ownership, what is the best way to correctly force nobody/nobody?

I've got my box setup with open shares for smb, my problem is that when I'm using plugins, the direct access to the mount points are allowing screwed up ownership/groups.

It there a way to mount the smb shares under the jail?
Or how about a cron job every few hours to reset grp/owner? (chown -R nobody /mnt/*) ??

Plugins that I'm using are sickbeard, sabnzbd, transmission, and couch potato.

(Edited due to stupidity showing... chmod instead of chown.)
