Mirrored boot drives, one failed but cannot remove

I have mirrored boot drives and one failed. So, I just bought another pair (16GB USB cruzers so pretty cheap). I installed one into a spare USB and clicked "replace" in the boot menu, which added it to the pool. After resilvering the alert changes to green. The old drive still shows up as "/old". I tried to click the "remove" button but get an error. So I reboot & pull the old drive while it's restarting. System fails to boot (error: no such device, GRUB rescue). I tried with the old drive re-inserted but get the same error.

Seems like I should be able to pull the bad drive regardless (otherwise what's the point of mirroring), so can someone tell me what gives?

I was at ver. 11.1 when this happened. After failing boot several times I just reinstalled fresh and upgraded to 11.2.
