Input please on my new build hardware selections

[T-NAS]

I would like to build a 10GbE-capable system, primarily for ZFS JBOD (Yes, I know, no protection, but it's the nature of my data and desire to offload drives), possibly on Hyper-V (unsupported I know). I may try to run a couple of the following plugins as well: ClamAV, ZoneMinder, Open Speed Test, UnifiController, SickChill, Paperless-ngx, Guacamole, Graylog, Grafana, Frigate, etc. so a reasonable CPU is prudent.

I have done much research and searching, but I clearly do not know every caveat with the options below. Your thoughts on these build options?

What drives are you planning - those PSU's seem very very small

I have eight 20TB Exos drives. I know they are not ideal, but most will be JBOD anyway. My former Asustor AS6508T had no problem running 8 drives with a 240W supply and concurrent spin-up. I think most users are putting in supplies that are way too large, and that puts you at the very inefficient end of the power/efficiency curve.

Regarding the M.2 to SATA adapter, technically why not? It has ample bandwidth for all five, and the same JMB585 controller that is on the motherboard.
