How to set default permission on new files

It's been a year since I took my linux fundamentals class and I can't for the life of me remember how to set up default permissions for new files. What's happening is that any file copied from a paticular device to the share is automatically getting read-only permissions applied. I need to have default permission of 770 applied to all future files that might be transferred over.

How can I go about that?

William, is it possible to have two shares setup with one defaulting permissions on new files and folders to 700 and the other defaulting permissions to 755?
