Glusterfs single node cluster?

Is it possible to do a single node glusterfs cluster and then scale out from there? Right now it doesnt seem to be able to establish a brick without setting up 2 nodes. If anyone has any info on this it would be great.

Not really, you need 3 nodes ideally to get consensus and have a "cluster" work properly. You can run a single node on ZFS directly, and if you expand to 3+ nodes later copy the data into the clustered namespace.
