... I think I misunderstood what you wrote at first with "boot the installer in UEFI mode" ... I though yo wanted me to restrict to UEFI in the bios. So I did it and it only came back to the UEFI bios at reboot.
I have now restarted the installation in UEFI mode from the installer as you wrote ... but I think this is what I did in the first place.
Let's see ...

The installation went fine.
But I am confused now ... the SSD seems to have disappeared!?!
I can not instruct the server to boot on it!?!

Disappeared how? Is it not listed anywhere in the boot options? It may have been moved to a different list (I've seen all sorts of crazy quirks and bugs).
