I want to bulid this server for a dropbox alternative (nextcloud), a media server, a downloading machine, VPN, pfsense, web server, gitlab server as well as a platform to experiment with any other services (e.g. pastebin, open source maps etc) I can self-host in order to have more digital privacy.

So after a lot of reading I have revised a few stuff and my new list would look like this:

Also I noticed that many people recommend Noctua fans but I couldn't find which model specifically, can someone recommend something? Silence will be greatly appreciated.

Can someone explain the Seasonic product range? Apparently G550 would be recommended but wouldn't it make more sense to get a newer model?

Can you also recommend a UPS? I am between APC and Eaton but haven't researched thoroughly yet.

The SSD's are for the boot drive and will be mirrored. I would like something around 64-128GB ideally but it doesn't look like you can get something cheaper than the Samsung for NVME. I would prefer not to use the SATA ports, nor the PCI x8 ports or USB flash sticks.

So since this is kind of the top of the budget I had in mind I am considering whether to drop a generation of Intel ECC CPU core and Supermicro motherboard, but it doesn't look like that would significantly drop the cost only a 100 GBP.

Edit: Thanks to @mistermanko. Forgot to add that I plan to use the drives as a RAID Z2. I think the space is sufficient and I am aware that I can't expand the vdev.

dropbox, media server, download server...these tasks will saturate your drive capacity of max. 16TB usable storage (with RAIDZ1) pretty quickly. Thats what I can tell you from experience with 24TB raw storage (16TB usable).
If you plan on using nextcloud for sensible data, you should have at least go for a RAIDZ2 pool and a viable backup strategy.

Thanks edited my post to say that I think the space is enough and that the drives will be set up in a RAID Z2.

I'll just highlight this once more, a good working backup solution is obligatory, your data is not safe unless you have it.

Yes I will be going with a 3-2-1 strategy. 3 copies of the data, 2 on-site (Some external HDD's I have lying around) and 1 off-site (either stored encrypted in the cloud or somewhere else i'll see)

Funny how much different my system looks in the end from what I originally was thinking about buying. I think that I may have overspent on a few components but they have the benefit that they can be repurposed and I saved so much money to allow me to afford a pretty decent UPS and better heatsinks and 1 more drive.

I will also reuse a raspberry pi to monitor the CyberPower UPS remotely.
