What do you want to use the system for? It looks like you read the hardware guide which is great. We can help steer you more if you tell use what your use case and goal for the system is.

Its going to be for backing up files from my many different computers, and also storing photos and videos, for my different projects.

True but i would love to build one my self, part of the fun!
I build PCs as an extra income and is very satisfying to see the finished working build, but, extra care needed that everything is compatible.
Future expand-ability is very important. Even when the budget is tight, don't compromise. judicious shopping can help.

Your "thinking of having 3-6 drives", the Bitfenix Nova Midi, only has 4 3.5" bays and one rear fan included, so you will need front fans for proper airflow.
If you want to stay with a small form factor build http://www.ebuyer.com/393752-fractal-design-node-304-mini-itx-case-fd-ca-node-304-bl
or, Mid Tower, starting about here, https://www.aria.co.uk/Products/Com...ource=uk.pcpartpicker.com&utm_medium=referral
