I need an independent server for Plex and as it is the R720 won’t have enough space at 32TB. The Supermicro is for that purpose and I already have the Dell populated with drives

I run emby, file server, etc from a Pentium G3450.

Now I cannot transcode more than 1 stream --- but I am ok with that. How many transcodes are you looking at simultaneously? That will dictate what CPU you will need.

I cannot comment on the CPU requirements for security cameras, as I don't have any experience with it. But I'd imagine it needs more HDD space for storage rather than heavy CPU usage.
