I have an Optane 800p and none of the workarounds are helping (i.e. changing pcislotnumber in the vmx and modifying ESXi's passthru.map). I guess if I'm going to use this for SLOG I'll have to pass it through as an RDM perhaps.

Which FreeNAS version?

Current stable.

RDM led to a PSOD. Plan C was to create a VMFS datastore on the Optane module and a virtual disk hanging off a VMSCSI adapter. FreeNAS doesn't see the disk. I think this Optane with AIO FreeNAS wasn't meant to be.

No, both my FreeNAS systems with Optane NVMe's installed are bare metal.

My config =
Optane 900p = ESXi 6.7 U1 datastore ("reserved" for FreeNAS 11.2-U3)

• 8 GB vDisk = Boot
• 20 GB vDisk = SLOG
• LSI Logic SAS SCSI Controller

The workaround didn't do it for me either ... if you care to elaborate on FreeNAS not seeing the disk - I'm more than happy to do what I can to help.
