I was previously running FreeNAS 9.10.1 and had both emby and the plexmediaserver running without any problems. I have just updated FreeNAS to 9.10.1-U2 and when FreeNAS rebooted back up to the gui, the emby plugin was missing from the left hand side menu, but plexmediaserver was still there. I reinstalled emby and it stayed in the OFF position, so after numerous times of trying to get it to turn ON, I gave up.

When I looked at the JAILS tab it shows that emby is running, yet no devices can acess the plugin
I took some screenshots and added them

if this works from the jail then the issue is with the jails networking
service emby-server start

I recommend you try disabling VIMAGE for the jail and assign an actual interface

Could you tell me how I would do that, as Im not sure what you mean

After doing a bit googling I found this
service emby-server start, and the changed it to this
service emby-server onestart

Then the emby server plugin has now started.

the command can be done in the command line for the jail, the network settings on the configuration for the jail. both are available on the Jails tab.

After I disabled VIMAGE, I found that the emby IP address was not reachable, ie Ping 192.168.0.2, and comes back with request timed out. So I then enable VIMAGE and Ping 192.168.0.2 again and this time I get a reply.

Also in a freenas.local daily security run output, there is a line that says:
WARNING: VIMAGE (virtualized network stack) is a highly experimental feature.

This sort of confuses me as it has been enabled for a while as I know of , but then I am advised to disable it

How do I assign an actual interface, is that done by enabling NAT?

on the same screen that you disable VIMAGE you can assign an interface. you might need to define an interface first.

I think VIMAGE gives you some features (possibly ability to do NAT?) but on some systems it makes jails networking unreliable.

What do I have to do to define an interface, is that something to do with an actual IP address. I can't see anything on the advance settings that says interface.

Ok, I select the Jail then click on Edit Jail, then click Advanced, where there are 'aliases', 'netmasks' and IP addresses and gateways.
