Assistance for first NAS. Hardware choices as well as raid (or ZFS equivalent) choice

Hello,

i am planning my first NAS and was wondering if the Hardware i have / planning to get is good, and which raid or ZFS equivalent i should use.

Hardware:
6x Seagate Ironwolf 6TB for the Storage ST6000VN001
1x Crucial P2 250GB for the OS CT250P2SSD8
1x AMD Ryzen 7 2700X Gold YD270XBGAFA50
1x Gigabyte B450 Aorus Pro rev 1.0
1x Random GPU if it needs a graphical output
1x Patriot Viper Steel DIMM Kit 16GB PVS416G320C6K
1x Alpenföhn Ben Nevis Advanced 84000000146
1x AeroCool Cipher ACCM-PB28004.11 / Cipher-S-BK-v1
1x be quiet! Pure Power 11 500W ATX 2.4 BN293

I already have the AMD Ryzen 2700x and the B450 Aorus Pro and a GPU if needed.
I would like to use Raid 6 (or at least 5) or an equivalent for ZFS, as it is only needed for copies of Optical Discs and Backups. I already have Backups in a cloud storage solution but another place for a copy of backups never hurts. I really would like to at least have 18TB as usable storage.

Gamer Gear - so not ideal
Z1 is not reccomended for large (2+TB) drives due to the chance of failure during resilver operations. Go Z2 at 24TB (probably 21-22 actual)
AMD - so may need messing with things like cool'nquiet or similar - turn all that sort of stuff off. Also turn off things like audio, basically anything you don't need. Do not overclock, run stock

If you haven't bought yet, consider a proper server motherboard: AsRockRack X470/X570/B550DU4 for Ryzen (the BMC chip will provide graphic output), or any Intel server board, possibly second-hand.
