So I upgraded to the latest FreeNAS, manual import.
After a reboot, failure to come back online. With the console showing:
So I reinstalled on a different host, brought it back online, then shut down to edit my 103.conf file to match 102.conf configuration changes, namely adding my disks.

I decided to stand up yet another instance but using 11.1. I followed the same steps, and it worked. I was able to import the volumes, enable sharing and back to normal.
I am by no means an expert, and I was just doing trial and error of what worked and what was not. Unsure of the cause, but would be nice to know I can upgrade when needed.
I'm going to post this on ProxMox forums as well, but I figured if I found this through google and forum surfing, I would have saved myself a few hours and hope I can do the same for someone else and perhaps find a root cause.
Oh, one last thing. I decided to try removing the manual entries int he proxmox configuration on the 11.2 version. Seems to have come up without an issue. So something with the 11.2 and ProxMox is not liking the pass through drives in the .conf files.
